Mini Calzones with Asparagus

Today I want to share with you healthier version of a CALZONE. When I think of a calzone I imagine pizza that looks like a GIANT PIEROG (yes I spelled pierog not pierogi on purpose. Why…check out this Pierogi post. 😉 )

Calzones are made typically from a regular pizza dough stuffed with typical pizza ingredients and baked.I LOVE calzones because they are easy to eat ON THE GO and they make a perfect snack. You can even pack them for school for your KIDS and they will LOVE it 🙂

However, like any pizza, it is not the healthiest choice. Unless YOU MAKE it HEALTHY 🙂

Dzisiaj na blogu MINI CALZONE, czyli mini pizza, która wygląda trochę jak pierogi 🙂 Calzone to nazwa pochodzenia włoskiego. Jest to ciasto przygotowywane tak jak na pizzę i wypełnione składnikami takimi jak pizza tylko złożone w pol.

Moja dzisiejsza wersja CALZONE jest trochę zdrowsza. Przygotowywałam ja z myślą o mojej córce, która jest bardzo wybredna, jeżeli chodzi o jedzenie. Farsz zrobiłam ze szparagów, pieczarek i sera mozarella. Do ciasta dodałam troszkę kurkumy i ziarenek chia.

Calzone to świetna przekąska nie tylko dla dzieci, ale i dla dorosłych. Z podanego przepisu wyszło ich 15 i zniknęły w jeden dzien.

I made these calzones mostly for my daughter. If you are a parent to a small child you probably know how difficult it is to make them eat healthy. All they want to eat the whole day is junk food. So I wanted to make something for her, that would look cute but also have some nutritional value.

My mini calzones are a size of a dumpling, just like pierogi and I stuffed them with ASPARAGUS, MUSHROOMS and some mozzarella cheese. (believe it or not but my three year old daughter LOVES mushrooms) The dough, in addition to the basic flour, yeast, oil and salt also has turmeric powder and chia seeds. Then I sprinkled them with sesame seeds and baked.

These MINI CALZONES don’t just look cute but taste very good and you can feel good about eating them 🙂 Great snack, lunch on the go or a small treat for the kids. You can also dip them in some marinara sauce or ketchup and they will be delicious 🙂 They were all gone in one day!

NOTE: I know it might look like it’s sooo much work. And we ALL value our time in today’s world. So If you don’t have time, or simply don’t feel like making your own dough you can use store-bought. You can also use CROISSANT DOUGH. I made more filling and had some leftover. So for the remaining filling I used a croissant dough. I also sprinkled some sesame and chia seeds over the top. They looked SO CUTE 🙂 My daughter could not wait to try them 🙂 

Ingredients (for 12-15 mini calzones):

For the dough

  • 1 cup of warm water
  • 1 packet dry yeast (3 tsp.)
  • 2 tbsp. olive oil
  • 2 cups of flour or as needed
  • ½ tsp. turmeric powder
  • 1 tsp. chia seeds
  • ½ tsp. salt
  • 1 tsp. sugar

For the filling

  • 10 asparagus
  • 4 oz. mushrooms
  • 2 oz. mozzarella cheese
  • 1 garlic clove, minced
  • ½ cup of grilled chicken breast or rotisserie chicken chopped
  • ½ an onion
  • Egg wash for brushing and sesame seeds to sprinkle on top

 Preparation

  1.  First I make the pizza dough. Combine the warm water with sugar and mix until sugar is diluted. Add the yeast and leave for 15 minutes for the yeast to activate. You will notice yeast becoming foamy. That’s when it’s ready to go.
  2. Add the flour 1/2 cup at the time and mix with the water using a wooden spoon. Add the oil. Keep adding the flour until you have a dough of a sticky consistency. You might need more than 2 cups of flour. Once you are able to work with your hands, remove the spoon and start kneading the dough. Don’t worry if it’s still sticky. IT HAS TO BE. If we add too much flour the calzones will be hard.
  3. Add turmeric powder and chia seeds. Keep kneading the dough for 15-20 minutes. The dough will start leaving your hands and becoming less sticky
  4. After 15-20 minutes of kneading,  form a ball out of the dough and put into a bowl sprinkled with flour. Set aside, cover with a wet paper towel and let it rise for at least an hour.

In the meantime we will make the filling

  1. The filling is SUPER EASY. All you have to do is clean and slice the mushrooms.(NOTE: don’t wash the mushrooms. They have too much water and if you wash them they will be soggy. just clean them with a slightly wet paper towel)
  2. Chop the onion.
  3. Chop the asparagus. ( I cut the asparagus into very small pieces so my daughter can’t realize that they are there 😉 , at least not right away :))
  4. Saute the onion and mushrooms in some olive oil. Once the mushrooms are slightly browned add salt, pepper and garlic
  5. Add the asparagus and saute for 5-6 minutes until the asparagus are soft. Turn off the heat and let it cools for few minutes
  6. Combine grated mozzarella cheese with chopped chicken and the asparagus and mushrooms.
  7. Mix well and the filling is ready

Now we need to fill the calzones

  1. Preheat the oven to 450F
  2. Once the dough doubled or even tripled in size it is ready to work with
  3. Roll the dough on your board. Make sure it is not too thin so the calzones won’t break. It should be approximately 1/4 inch thick.
  4. Cut out circles with the glass
  5. Put 1 tsp. of the filling inside and close the circle to shape half moon
  6. Make sure the calzones are closed completely and make a nice pattern around with the fork.
  7. Brush the calzones with egg wash, sprinkle sesame seeds on top and bake for 15 minutes or until golden brown on top
  8. ENJOY!!!

Cool thing about the calzones is that you can stuff them with anything you like! Try it! 🙂

Składniki na 15 rogalików/calzone:

Na ciasto

  • 1 szklanka ciepłej wody
  • 1 opakowanie suszonych drożdży (3 lyzki)
  • 2 łyżki oliwy z oliwek
  • 2 szklanki mżki (lub wg. potrzeby)
  • ½ łyżeczki kurkumy
  • 1 łyżeczka ziarenek chia
  • ½ lyżeczki soli
  • 1 łyżka cukru

Na nadzienie:

  • 10 szparagów
  • 15-20 pieczarek
  • 1/2 szklanki startego sera (ja użylam mozarelli, ale można użyc innego. wg.uznania)
  • 1 zżbek czosnku, drobno posiekany
  • ½ szklanki ugotowanego kurczaka drobno pokrojonego
  • ½ cebuli, drobno posiekanej
  • jajko do posmarowania na wierzchu, aby rogaliki ładnie się zezłociły

 WYKONANIE:

  1. Najpierw robię ciasto na pizzę. Drożdże wsypuje do wody, którą wcześniej posłodziłam. Czekam 15 minut aż drożdże się uaktywnia. Gdy na wierzchu pojawi się piana znaczy, ze są one gotowe.
  2. Dodaje po trochu maki  oraz olej. Mieszam drewniana łyżka aż powstanie ciasto o lepiącej się konsystencji. Dodaje resztę maki i zaczynam wyrabiać ciasto ręką. Ciasto będzie się kleić, ale to nie szkodzi. Tak powinno być. Za dużo maki sprawi ze calzone będą twarde.
  3. Dodaje kurkumę i ziarenka chia do ciasta i ugniatam przez ok. 15 minut. Gdy ciasto zacznie się odrywać od rak, przekładam do miski posypanej mąka i odstawiam na 1-2 godziny do urośnięcia.
  4. W tym czasie przygotowuje farsz
  5. Drobno posiekana cebulkę z pieczarkami pokrojonymi w plasterki podsmażam na patelni. Gdy grzybki się zrumienia dodaje czosnek, sól i pieprz
  6. Następnie dodaje drobno pokrojone szparagi i podsmażam wszystko aż szparagi będą miękkie. (ok.5 minut)
  7. Gdy pieczarki i szparagi ostygną, mieszam je ze startym serem i nadzienie jest gotowe!

Teraz robimy calzone:

  1. Piekarnik nagrzewam do 225C
  2. Jak już ciasto na pizzę urośnie, wałkuję je i wycinam szklanka kółka, tak jak na pierogi.
  3. Nadziewam farszem i zaklejam. Można też zrobić wzorek dookoła widelcem.
  4. Wierzch calzone smaruje rozbitym jajkiem i piekę przez ok. 10-15 minut na złocisty kolor
  5. SMACZNEGO!!!

Calzone to bardzo łatwa przekąska i można je wypełnić każdym nadzieniem wg. własnego gustu 🙂 Jeżeli macie ochotę na cos zdrowego polecam nadzienie szparagowo-pieczarkowe!
