Pierogies are one of the most popular Polish dishes. There are many different stuffing varieties. You can make them savory with potatoes, cheese, meat, mushrooms, even spinach or sweet with fruits or sweetened farmers cheese. Whatever you are in the mood for.
My favorite are savory potato and cheese pierogi that I posted some time ago. But sometimes I crave the sweet ones as well. Especially, when I have delicious fruit like blueberries or strawberries on hand. Today I made them with sweet, juicy and yummy blueberries. You can use the frozen once as well. Whatever you have available at the moment.
For the dough:
- 2 cups of flour
- Boiling water (approx. 1 cup)
For the filling:
- One pint of blueberries
Make the dough by combining flour and water. Some people add an egg but it’s not necessary
Kneed the dough until it comes together
Cover the dough with the plastic wrap and set aside for 30 min.
After the dough has rested, roll it pretty thinly (not too thin so it doesn’t break when you stuff them)
Cut out the circles using a cup. Put approx. 1 tbsp. of filling inside and close the pierogi. You can use the fork to make sure they are closed well and also to make them look pretty
Boil in the salted water until they start to float. Once they’re floating boil for 1-2 minutes and remove. Spray with some canola oil cooking spray or butter to prevent from sticking.
Serve with some sour cream and a sprinkle of sugar!
